Last week I took off to Mesa, Arizona for my annual “girl’s week” with my four best friends from college. These women and I have been coming together for almost thirty years. During those moments, we spend the majority our time grilling into each others lives, shopping our faces off, and drinking way too many St Germaine Cocktails, but one of the things I look forward to the most is all the different meals we cook. We each bring recipes to cook during the week. These ladies are exceptional cooks, and it is a blast working side by side in the kitchen!

PALEO MANGO SALSA – A RECIPE REVIEW

One night we decided to grill halibut and accompany it with a monstrous green salad. As I headed out to commandeer fresh fish, Courtney mentioned that I should pick up some kind of salsa to put on the fish. I try to resort to healthy whole foods whenever possible, so instead of buying some processed mango business out of a jar I searched for a salsa recipe that would beautifully showcase the halibut. Bingo.

I landed on PaleoOMG’s mango salsa recipe. I loved that it only included a few ingredients. It looked simple to make, but most of all, it looked beautiful. (I love beautiful food!)

TIP: Peeling a damn mango – I am telling you, I have struggled with this for a long time, often ending up with a mango-colored mess all over my hands and the cutting board. I finally “YouTubed” it. (So, when did “YouTube” become a verb?) Thankfully, this grocer guy was very helpful. MANGO CUTTING DEMO

NOTES:

The changes I would make to PaleoOMG’s recipe are:

  • Add additional lime juice (i.e. one extra good squeeze), cilantro, and salt (another 1-2 dashes). The recipe just felt like it needed a little more “wow” factor.
  • Make sure to use slightly “under ripe” mangos and the avocado, otherwise, if the fruit is too ripe, the recipe turns out mushy.
  • Chop the avocado and mango into small pieces – similar in size. This makes for a prettier finished product.
  • I discovered the HERB CUTTER last year, and I LOVE LOVE LOVE It makes chopping cilantro, basil, rosemary, or any herb a total cinch. Click the link to buy it directly.
  • Lastly, consider pairing your halibut and salsa with my TROPICAL KALE SALAD.

The salsa was a unanimous hit. We all agreed that we would make it again – with the modifications listed above. You have my full confidence that you cannot go wrong with this yummy salsa!
