I have been trying to go Paleo just struggle with the no carb thing. It makes me very cranky;) I would love to try these recipes; all of them look delicious.
Andrea. When you first start, add lots of sweet potato in at first then slowly reduce. Once the carb monster is tamed you will not even miss it and remember veggies DO have lots of carbs. They are just good carb. I’ll be making my third batch of this pumpkin soup/stew this weekend.
1. Bake an organic pumpkin
2. Scrape out seeds
– Bake seeds separately
3. Puree pulp in Vitamix
4. Layer chopped veggies on bottom of Crock Pot
– Sweet potatoes, onion, broccoli, cauliflower, garlic, etc.
5. Lamb/beef roast on top of veggies
6. Cup of pumpkin puree or more as desired
7. Cup of water or more if needed to cover at least half the roast
8. Cook on low for 8-10 hours
This would probably feed six since it lasts me several days.
