Red Wine Vinegar Chicken was an accident really as many beautiful recipes are. A trifecta combination of marrying ingredients that have no business being together, unavailability of typical “go-tos”, and just a general cock-up in what you meant to combine.
Brent and I were in Michigan recently staying at a work colleague’s vacation home. “Vacation home” is an understatement. This place is the Kennedy Compound. There is a main house, a lake house, cabins, lake toys, four dogs and two full-time guys that are there to cater to your every “David, can you grab firewood, and reset the DVD player” whim and fancy. We were the only ones occupying the grounds at the time, so we had all of this Michigan, fall, loveliness to ourselves.
The place was fully stocked with all the essentials, so we brought in groceries to prepare our food and enjoyed the solitude of having the place to ourselves. On our last night, we had some chicken breasts and salad fixings left over. I went to make a marinade for the chicken but realized I was missing some of the key ingredients that I would typically add together. I got creative. I started pulling things from the cupboard and just dibbled and dabbled until it looked about right. I gently sliced the breast on their grain (just a little slice! ¼ inch into the breast on the bias) to allow for maximum absorption. I then let them sit out at room temperature marinating for about 15 minutes. Then I baked the little babies.
What I loved about this Red Wine Vinegar Chicken recipe
1) The marinade was very fast to make. (and it made super cool layers!)
2) The recipe is paleo! So it is great for those wanting to eat whole food, gluten free or dairy free.
3) The red wine vinegar created a tenderness I have never encountered before with chicken breasts. (Chicken dries out so easily when baked or grilled.)
4) It is hard to get flavor-packed chicken with a light marinade but this recipe bursts with deliciousness.
I have made this chicken dozens of times since because it is perfect for my 3 Day Reset (coming at the end of November). If you bake chicken on the weekend to use throughout the week, this is a great marinade to use. The finished product is just as excellent and flavorful cold as well as warm.

This chicken would also go wonderfully with my Tropical Kale Salad!
